At Aahana, Kumaoni cuisine transcends the ordinary—it’s an intimate connection to the heart of the mountains. Each dish, slow-cooked with time-honoured traditions, carries the quiet wisdom of village kitchens. Our curated thali features regional specialities like Aloo ke Gutke, Bhaatt ki Daal, Bhang ki Chutney, Sisunak Saag, and Pahadi Raita—served with warm madua rotis and fragrant local rice.
Locally sourced, each ingredient tells the story of the land and its people—familiar to our chefs as the chatter at a village chai stall, and just as satisfying.


Rajma from Munsiyari: Grown by a small family who traditionally harvests just for themselves, they have exclusively partnered with Aahana to share their produce on a fair commission.
Hand-Pounded Mandua Flour: Sourced from village co-operatives, bringing you the rustic goodness of the hills.
